Modena Balsamic Vinegar is made in this Italian region by cooking white grape must of the Trebbiano variety which have a high sugar content. Finally it is turned into vinegar and is aged in different types of cask: oak, chestnut, cherry, ash and mulberry wood. It continues this process for various years until it becomes a dark, almost black, sweet, concentrated vinegar.

The use of the term “balsamic” dates back hundreds of years due to its former use as a remedy for illnesses of the time.
